The calendar below is supposed to give an idea of when things come into “season”, but with the English weather & global warming/climate change, things are a “bit in  the air” (literally). Nowadays “seasons” don’t mean so much, it is always warm in some part of the world & it is much cheaper to get the item from half way across the planet, even if half the indigenous population of the country of origin are starving!

The “Rating” column is very subjective, you may think lettuce wine is the best wine in the world. The “Maturation Time” is a guide only.

FRI UT IN  BEERS

Not all fruits go well with ales, even fewer go well with lager, the fruit is usually added to the secondary fermenter.

Apples are best used in wines meads & cider, they are too acidic for beers..

Apricots produce a peach like flavour, use at a rate of 200-500Kg/litre.

Blackberry give a good flavour & colour, try 125-350g/litre.

Blueberries do not usually go with beer but you could try 75-250g/litre.

Cherries  ripe, sour (culinary) cherries are best, use 250-500g/litre.

Peaches fade when used in beer, try apricots instead as the taste is similar.

Pumpkin is quite popular in the USA, try 125-250g/litre.

Raspberry is one of the best fruits to use with beer, try 50-120g/litre.

Rhubarb makes a nice saison, try 5-15g/litre as a starting point.

Strawberries are not very good in beer - they lack of flavour & colour, try 250-500g/litre.
